Leaf-to-Water Ratio: The First Thing to Fix Before You Blame the Tea
Temperature and steep time get most of the attention in tea brewing advice, but the variable underneath both of them — how much leaf you're actually using — is arguably more important and gets fixed less often, mostly because it's less visible. A kettle either boils or it doesn't; a timer either beeps or it doesn't. But "about a teaspoon" is doing an enormous amount of unexamined work in most people's daily cup, and it's frequently wrong in ways that no amount of temperature or time adjustment can fix. If you've already dialed in the right water and the right steep and a tea still tastes off, ratio is usually the next place to look, and it's often the place the real problem was hiding all along.
What "ratio" actually means
Leaf-to-water ratio is normally expressed as grams of dry leaf per litre of water, and it varies by tea type because different leaf styles pack different amounts of mass into the same visual volume. A fluffy, downy white tea takes up a lot of space for relatively little weight; a tightly rolled oolong or a dense, compressed pu-erh packs considerably more mass into the same scoop. That's why "one teaspoon per cup," treated as a fixed rule for every tea, quietly under-doses some types and over-doses others even when the volume looks the same in the spoon.
Worked amounts for a standard cup
For a 350ml cup at Western-style ratios, the numbers work out as: white tea 3.2g (about 1.6 teaspoons), green and yellow tea 2.8g (1.4 teaspoons), oolong 3.5g (1.8 teaspoons), black tea 3.2g (1.6 teaspoons), pu-erh 3.9g (1.9 teaspoons), and herbal tisane 4.2g (2.1 teaspoons). Notice that none of these lands neatly on a single flat teaspoon, and the range across types (2.8g to 4.2g for the same cup size) is wide enough that using one fixed spoon measurement for every tea in the cupboard means most of them are getting either noticeably too little or noticeably too much leaf.
Scale versus teaspoon
A digital gram scale removes the guesswork entirely and is the more accurate method, since it measures the thing that actually matters (mass) rather than a proxy for it (volume). A teaspoon measurement is a reasonable approximation using roughly 2 grams per teaspoon for loose leaf, but that "roughly" is doing real work: a loosely packed, large-leaf white tea and a small, dense, broken-leaf black tea can both fill the same teaspoon while weighing noticeably different amounts. If a scale isn't available, teaspoon measurements from the table above are a solid starting point, but treat a persistently weak or persistently harsh cup as a signal to double-check the actual weight rather than assuming the recipe itself is wrong.
What too little leaf actually does
Under-dosing leaf is easy to mistake for a temperature or timing problem, because the instinctive fix — steeping longer — makes the underlying issue worse rather than better. With too little leaf, a longer steep does pull more out of what leaf is there, but disproportionately more tannin and astringency relative to the sweetness and body that more leaf would have contributed. The result is a cup that's simultaneously thin-bodied and harsh on the finish, which reads as a confusing, contradictory kind of "bad" that doesn't map cleanly onto either the "too hot" or "too cool" failure modes described in what goes wrong when you get temperature wrong. What too much leaf actually does
Over-dosing is more forgiving in one sense — a strong, over-leafed cup is usually still recognizably the right tea, just intense — but it pushes the same steep-time window to do too much work, since the ideal steep length for a given ratio shortens as leaf density goes up. A tea brewed with double the recommended leaf will taste unpleasantly strong and often bitter well before the "normal" steep time is up, and shortening the steep to compensate, while workable, means the ratio itself is now driving a nonstandard steep time rather than the tea type's own recommended window doing the work.
The water side of the ratio gets ignored too
Leaf amount gets all the attention in "ratio" discussions, but the water side of the equation is just as often approximate. Mugs vary enormously in actual volume — a slim 200ml cup and a generous 400ml mug are both commonly called "a cup of tea," despite holding roughly double the water of each other, which means the same fixed teaspoon of leaf produces a meaningfully different ratio depending purely on which vessel you reached for. It's worth actually checking the volume of the mugs and teapots in regular rotation once, with a measuring cup, rather than assuming; the fix for a chronically weak or chronically strong daily cup is sometimes not a different amount of leaf at all, but the discovery that a favorite mug is much bigger or smaller than it looks.
Bagged tea and the ratio problem
Ratio math gets murkier with bagged tea, since a standard bag is a fixed, pre-measured amount of leaf that doesn't automatically match the water volume you're using it in. A single bag designed for a 240ml cup, dropped into a 400ml mug, is effectively under-dosed relative to that larger volume, producing the same weak-and-sometimes-still-harsh profile described above — the fix in that case isn't a longer steep, it's a second bag, or simply using a smaller mug to match what the bag was portioned for. Bags also tend to use finer-cut leaf than loose tea of the same type, which changes the ideal steep time (shorter, generally) but doesn't change the underlying ratio logic; a bag is just a pre-measured, fixed answer to the ratio question rather than an adjustable one.
Common ratio mistakes worth ruling out
A few specific habits are worth checking against directly. Reusing a spoon from a different tea (or a different brand) as a fixed measure ignores that leaf density varies enough between products that "the spoon I always use" can be calibrated to an entirely different tea than the one currently in it. Rounding a scale reading generously "because it's close enough" defeats much of the purpose of using a scale in the first place, particularly for teas with a narrow effective range. And treating a recipe written for loose leaf as directly transferable to a much finer, pre-ground, or fannings-grade version of the same tea type ignores that finer cuts extract faster and often want somewhat less leaf, not the same amount, to land in the same place.
Reversing the calculation
The ratio also works in the other direction, which is useful when you know how much leaf you have (say, from a pre-portioned sachet or a recipe from a tea shop) and need to know how much water to use rather than the other way around. Nine grams of black tea at the standard Western ratio corresponds to almost exactly one litre of water — a useful anchor figure, since it means a shop-portioned "9g" pouch of black tea is sized for a full-litre pot, not a single cup, and using it for one 250ml mug would produce a wildly over-strong result.
A quick sanity check before brewing
Once a ratio starts to feel familiar for the teas you drink most, a quick sanity check before brewing something new is worth doing: does the amount of dry leaf look proportionate to the water it's going into, roughly matching the table above for that type. This isn't about weighing every single cup forever — it's about catching the more obvious mistakes, like using a spoon calibrated to a completely different tea, before they turn into a "this tea isn't very good" verdict that's really a ratio verdict in disguise.
Ratio and gongfu brewing
Gongfu-style brewing uses the same underlying concept at a much higher density — often four to six times as much leaf for the same volume of water, offset by much shorter steeps. Concretely, 200ml of black tea calls for about 1.8g at the Western ratio versus about 8g at the gongfu ratio, more than four times as much leaf in the same amount of water. None of these figures are meant to be followed rigidly forever. Once the standard ratio for a tea type is producing a cup that's clearly cohesive rather than confusingly thin-and-harsh or overpoweringly strong, nudging the amount up or down by 10–20% to match personal taste is a reasonable next step — the goal of getting the baseline ratio right first is to make that adjustment meaningful, rather than trying to fine-tune a cup that's fundamentally miscalibrated in the first place.
