How to Steep Tea Properly: Temperature and Time by Tea Type
Ask five tea drinkers how to make a cup and you'll likely get five different answers — and most of them will be right, for the tea they had in mind. The single biggest mistake in home tea brewing isn't a bad kettle or old leaf, it's using one water temperature and one steep time for every tea in the cupboard. A method that makes black tea sing will make green tea taste like boiled spinach.
Why temperature changes everything
Tea leaf releases different compounds at different rates depending on how hot the water is. Catechins and tannins — the astringent, bitter-leaning compounds — extract quickly in near-boiling water. The sweeter, more delicate aromatic compounds release more gradually and at lower temperatures. Minimally processed teas like white and green retain more of the tender, bitterness-prone compounds because they haven't been through the oxidation that breaks a lot of that material down. Pour boiling water straight onto a green tea and you scald those compounds out fast, before the subtler flavors have a chance to show up — the result is a flat, grassy-bitter cup that gives green tea its unfair reputation.
Fully oxidized black tea and post-fermented pu-erh have already broken down much of that bitterness-prone material during processing, so they tolerate — and often need — a full boil to open up completely. A lukewarm pour on black tea gives you a thin, underdeveloped cup that never gets past first gear.
A practical range by tea type
- White tea: 75–80°C (167–176°F), steeped 4–5 minutes. The light, downy buds are delicate and slow to release flavor, so a longer steep at a moderate temperature draws out sweetness without tipping into bitterness.
- Green tea: 70–80°C (158–176°F), steeped 2–3 minutes. This is the tea most damaged by boiling water — err cooler and shorter rather than hotter and longer.
- Yellow tea: 75–80°C, steeped 2–3 minutes. Processed similarly to green tea with an extra "sealing yellow" step, it wants a comparably gentle treatment.
- Oolong: 85–95°C (185–203°F), steeped 3–5 minutes. Partially oxidized and often rolled tight, oolong sits between green and black and rewards a hotter pour that helps rolled leaf unfurl.
- Black tea: 95–100°C, steeped 3–5 minutes. Fully oxidized and forgiving of near-boiling water.
- Pu-erh: 90–100°C, steeped 3–5 minutes, ideally after a quick rinse to wake up compressed leaf.
- Herbal tisanes: a full boil, steeped 5–7 minutes. These aren't from the tea plant at all, so the delicacy concerns above don't apply — dried flowers, roots, and barks generally need more heat and time to give up their flavor.
Altitude changes the ceiling
A detail that trips up a lot of tea drinkers who move to higher elevation: water boils at a lower temperature as air pressure drops. At roughly 1,500 metres (about 5,000 feet), water tops out around 95°C instead of 100°C, and the gap widens the higher you go. If a recipe calls for a full boil and your kettle simply can't reach 100°C where you live, that's not a flaw in your technique — it's physics. Working through the actual numbers makes this less abstract. At sea level every tea type in the table above gets its full range: black tea can go anywhere from 95–100°C, herbal tisanes get a genuine full boil. Climb to 1,500m and the local boiling point drops to 95°C, which folds black tea's range down to a flat 95°C — the bottom of its normal window becomes the only option — and does the same to herbal tisanes, capping what was a 100°C instruction at 95°C instead. Keep climbing to around 3,000m and boiling point falls again, to about 90°C, pulling black tea, pu-erh, and herbal infusions all down to a shared 90°C ceiling. Green, white, and yellow tea, whose ranges already sit at 70–80°C, aren't affected by either change — you'd have to go well past 3,000m before altitude starts eating into their already-cool targets. The practical takeaway: altitude mostly matters for the teas you'd otherwise boil hard, and it never asks you to brew delicate teas any hotter or longer than you already would at sea level.
Steeping longer isn't the same as steeping stronger
It's tempting to assume that if 3 minutes is good, 6 minutes must be better. In practice, most of a tea's flavor and caffeine extract within the first couple of minutes; steeping well past the recommended window mostly adds bitterness and astringency from tannins that continue dissolving long after the pleasant compounds have already peaked. If a cup tastes harsh, the fix is usually a shorter steep next time, not more leaf or hotter water.
It's worth being honest, though, that steep time and temperature are only two of the variables in play, and they're not always the one actually at fault. A cup that tastes both weak and bitter at the same time — thin on flavor but still harsh on the finish — is a common symptom of too little leaf for the water rather than a temperature problem at all. Because there's simply not enough leaf mass to build real body, the eye reaches for a longer steep to compensate, which pulls disproportionately more tannin out of the leaf that is there without adding the sweetness and aroma more leaf would have contributed. If lengthening the steep keeps making a tea taste worse rather than stronger, it's worth checking the leaf-to-water ratio before touching the clock again; fixing the ratio first solves more "bad cup" complaints than temperature ever does on its own.
What the failure actually looks like
The two directions of getting temperature and time wrong don't taste the same, and knowing which one you're tasting tells you which dial to turn. Water that's too hot for the tea, or a steep that's run too long, tends to show up as flat bitterness and a drying, mouth-puckering astringency that lingers well after you've swallowed — the catechins and tannins responsible for that sensation have simply had more opportunity to dissolve than the tea was designed to give up. Water that's too cool, or a steep cut short, tends to taste thin, watery, and one-dimensional, missing the aroma and body the tea should have, without necessarily being unpleasant — it just isn't done yet. The fix for the first is less heat or less time; the fix for the second is more of either, or more leaf. Confusing the two, and reaching for more leaf when the real problem is a scalding pour, or reaching for a hotter kettle when the real problem is too little leaf, is how a lot of home brewers talk themselves into thinking a perfectly good tea is simply "not very good."
Loose leaf versus bags
The temperature guidance above applies to both, but bagged tea is frequently cut much finer than loose leaf — sometimes down to "fannings" or "dust" grade — which dramatically increases the surface area in contact with water. Finer cuts extract faster, so many drinkers find bagged tea needs a steep toward the shorter end of the range, or it can go bitter before the timer even feels close to done.
