White, Green, Yellow, Oolong, Black, and Pu-erh: The Six Tea Types Explained
One of the more surprising facts for new tea drinkers is that white, green, yellow, oolong, black, and pu-erh tea can all come from the exact same plant: Camellia sinensis. There's no separate "black tea bush" or "green tea bush" — the differences that give each type its distinct color, aroma, and character come almost entirely from what happens to the leaf after it's picked, not from a different species or even a different cultivar most of the time.
The variable that matters most: oxidation
The central process that separates the six types is oxidation — a chemical reaction that starts the moment a leaf is bruised or broken and its cell walls release enzymes that react with oxygen in the air. This is the same basic chemistry that turns a cut apple brown. Tea makers control oxidation deliberately, stopping it early for some teas and letting it run its full course for others. The amount of oxidation, more than anything else, determines whether a tea ends up pale and grassy or dark and malty.
The steps behind every tea type
Underneath the six names, tea processing generally moves through the same handful of stages, applied in different amounts and different orders depending on what the maker is aiming for. Withering lets freshly picked leaf lose some of its surface moisture and go slightly limp, which makes it pliable enough to roll without shattering and begins softening its raw, grassy edge. Rolling or shaping bruises the leaf — twisting it into strips, rolling it into balls, or breaking it into smaller pieces — which ruptures cell walls and exposes the leaf's internal juices to air, kicking off oxidation. Oxidation itself is then either stopped almost immediately (green, white, yellow), allowed to run partway (oolong), or allowed to finish completely (black), depending entirely on how long the leaf is left before the next step. Firing or final drying halts whatever oxidation remains and drives off the last of the moisture so the leaf stores well. Pu-erh adds an entirely separate stage on top of this — fermentation, driven by microbial activity rather than the leaf's own enzymes — which is why it's treated as a category apart from the other five rather than just another oxidation level.
White tea: the least processed
White tea uses the youngest buds and leaves, often still covered in fine white hairs (the source of its name), and undergoes minimal processing — essentially just withering and drying, with little to no rolling or intentional oxidation. Because so little is done to it, white tea tends to be the most delicate in flavor: light, subtly sweet, and floral, but also the type most easily ruined by water that's too hot.
Green tea: oxidation stopped fast
Green tea is picked and then quickly heated — either steamed (the common approach in Japan) or pan-fired (more typical in China) — to deactivate the enzymes responsible for oxidation almost immediately. This locks in the leaf's vegetal, grassy character and green color. Because the leaf is barely altered from its fresh state, green tea is particularly sensitive to brewing temperature; water that's too hot extracts bitterness before the more delicate notes can come through.
Yellow tea: the rare middle step
Yellow tea follows a process similar to green tea but adds an extra step called "sealing yellow" (men huang), where the leaves are wrapped and allowed to sit in gentle, humid warmth for a period after the initial heating. This mellows some of the grassiness that green tea can have, producing a smoother, sweeter cup. Yellow tea is genuinely rare and represents a small fraction of tea production worldwide, largely because the extra step adds time and cost without dramatically changing the leaf's market appeal compared to green tea.
Oolong: the wide middle ground
Oolong occupies the broadest range of any tea type, with oxidation levels anywhere from roughly 10% to 80% depending on the style. Lightly oxidized oolongs, common in Taiwan, can taste bright and floral, closer to green tea. Heavily oxidized, often roasted oolongs lean toward the malty, fruity territory associated with black tea. Many oolongs are also rolled into tight balls or twisted strips, which means they need a few infusions to fully unfurl — part of why oolong is a favorite for gongfu-style multi-infusion brewing.
Black tea: full oxidation
Black tea (called "red tea," or hong cha, in China, where the name refers to the liquor's color) is rolled or cut to rupture the leaf cells and then allowed to oxidize fully before a final firing stops the process. Full oxidation produces the dark color, robust malty or fruity flavor, and generally higher caffeine content people associate with everyday tea. It's also the most forgiving type to brew, tolerating near-boiling water and a longer steep without becoming unpleasant.
Pu-erh: fermented, not just oxidized
Pu-erh is the outlier of the group because its defining process isn't oxidation at all, but fermentation — a genuinely different chemical process involving microbial activity, similar in spirit to how cheese or wine develops over time. "Raw" (sheng) pu-erh is pressed into cakes and left to age slowly over years, developing complexity the way a good wine might. "Ripe" (shou) pu-erh undergoes an accelerated fermentation process developed in the 1970s that compresses years of aging into weeks, producing an earthy, smooth cup much faster. Both styles carry an earthy, sometimes mineral or woody character unlike anything in the other five types.
One plant, and also more than one plant
It's true that all six types can be made from Camellia sinensis, but it's worth being precise about what that does and doesn't mean. There are two broad varieties within the species — a small-leaf variety generally associated with East Asian teas and a large-leaf variety associated with tea grown in and around Assam — plus a large number of cultivars bred within each for flavor, yield, and climate suitability. A grower can, in principle, make white, green, or black tea from the same cultivar simply by choosing a different process; in practice, growers usually pick a cultivar suited to the process they intend to use, because leaf size, chemical makeup, and growing region all affect how well a given process turns out. So the "one plant" fact is real and worth knowing, but it's a statement about species, not a claim that every tea type is otherwise interchangeable leaf-for-leaf.
Names that cause confusion
A few labeling quirks trip up new tea drinkers. What China calls "red tea" (hong cha) is what most of the English-speaking world calls "black tea," with the Chinese name describing the color of the brewed liquor and the English name describing the color of the dry leaf — both names refer to the same fully oxidized type. "Green tea" as a term can also mislead: it describes an oxidation level and processing method, not a single fixed flavor, and Japanese steamed greens (grassy, marine, often quite vegetal) can taste dramatically different from Chinese pan-fired greens (nuttier, sometimes closer to toasted). And matcha, the shade-grown, stone-ground powder used in Japanese tea ceremony, is itself a green tea by processing — a distinct preparation method layered on top of the same green-tea category described here, not a seventh type.
Decaffeinated tea: a process, not a type
Decaffeinated versions of green, black, and other tea types exist, but decaffeination isn't a seventh entry on this list — it's an industrial step applied after the base tea has already been made, using solvents, carbon dioxide, or water-based processing to pull most of the caffeine back out. It's a genuinely different process from the folk idea of a quick 20–30 second home rinse "removing the caffeine" before the real steep; commercial decaffeination is a dedicated, multi-step process run at scale, and even then it typically leaves a small residual amount of caffeine behind rather than eliminating it outright. It's also worth knowing that decaffeination can strip out some flavor compounds along with the caffeine, which is one reason decaf versions of a tea often taste noticeably flatter than the caffeinated original.
Why this matters for how you brew
Understanding where a tea sits on this spectrum tells you a lot before you even open the bag. Delicate, barely processed teas (white, green, yellow) want cooler water and shorter steeps to protect what little processing has left behind. Heavily transformed teas (black, pu-erh) tolerate and often need more heat and time. Oolong sits in between and rewards experimentation, since its range is so wide. None of the six types is objectively "better" — they're different enough that comparing a delicate white tea to a robust pu-erh is closer to comparing a white wine to a stout than to judging one against the other on the same scale.

Fully oxidized black tea and fermented pu-erh, by contrast, give up more of their character in a single steep, which is part of why they became the default for quick, everyday Western-style brewing.
