Caffeine in Tea Is Arithmetic, Not Magic: How to Actually Estimate It
Caffeine content in tea gets talked about as though it were a fixed, looked-up fact — "green tea has X mg, black tea has Y mg" — when in reality it's one of the more variable numbers in the entire cup, shaped by cultivar, leaf grade, growing conditions, and how you actually brew it. This is a look at how a transparent, formula-based estimate is actually built, what it gets right and wrong, and why a popular home method for cutting caffeine doesn't do what people think it does.
The starting point: an average, not a measurement
The estimate here starts from commonly cited average milligrams of caffeine in a standard 240ml cup for each tea type, at a typical leaf dose and a typical steep time: roughly 15mg for white tea, 28mg for green, 25mg for yellow, 38mg for oolong, 47mg for black, and 60mg for pu-erh, with herbal tisane at 0mg since it isn't made from the tea plant at all. Why pu-erh estimates higher than green tea
The gap between pu-erh's 60mg baseline and green tea's 28mg is a genuinely debated question rather than a single settled cause, and it's worth resisting a tidy one-line explanation. Oxidation and fermentation themselves aren't understood to meaningfully destroy or create caffeine, so the difference more likely comes down to some combination of cultivar (pu-erh is typically made from a broad-leaf varietal historically associated with somewhat higher caffeine content), leaf maturity, and cutting grade — factors that also happen to correlate loosely with which of the six types a given leaf tends to become. The honest summary is that this baseline number reflects commonly cited averages across real-world tea rather than a single, cleanly isolated cause, which is exactly why it's presented as a starting estimate rather than a settled fact.
Scaling with cup size and leaf dose
Once you move past the reference cup, the estimate scales in the obvious direction with more water or more leaf. A 350ml black tea mug at a 5-minute steep comes out around 77mg — noticeably more than the 240ml reference figure, purely because there's more water carrying proportionally more leaf. Push the leaf dose up on that same 350ml mug, to roughly double the standard amount, and the estimate roughly doubles too, to around 158mg — leaf amount moves the number close to linearly, which lines up with the leaf-to-water ratio math covered elsewhere: doubling the leaf for the same water doesn't just make tea stronger in flavor, it meaningfully changes the caffeine estimate too.
Why steep time matters less than people assume
Steep time is the variable most home advice focuses on, and it matters, but with real limits. The model scales time on a curve rather than a straight line, because most caffeine extracts early and additional time adds progressively less. A gongfu-style 120ml oolong pour with 8g of leaf and a 10-second infusion still estimates around 61mg — a genuinely large number for such a short steep, precisely because a high leaf dose matters more than a long steep time. Doubling a steep time from 3 minutes to 6 minutes does not double the caffeine; it adds a real but much smaller increment on top of what the first few minutes already extracted.
Why the quick-rinse "decaffeination" myth doesn't hold up
A popular home method claims you can meaningfully decaffeinate tea by steeping it briefly (10–30 seconds), discarding that water, and then brewing the "real" cup from the same leaf. The model here doesn't support that claim, and its own built-in limits explain why. The time-based scaling is bounded between a floor of 0.4× the reference amount for the shortest steeps and a ceiling of 1.6× for the longest ones — so even the very quickest steep the calculator will estimate for still represents roughly a quarter of what continued steeping could eventually extract (0.4 out of a possible 1.6), not something close to zero. Concretely, a 10-second rinse and a 30-second quick steep of green tea both land around 11mg at the reference dose, versus 28mg for a full 3-minute steep — meaningful caffeine already came out in that "quick rinse," it just wasn't the majority of it. The floor also means cutting a rinse from 30 seconds down to 10 or 5 doesn't reduce the estimate meaningfully further; the model treats anything under roughly half a minute as hitting the same minimum extraction, so a shorter rinse isn't a proportionally more effective one.
None of this means a rinse is pointless — rinsing compressed or tightly rolled leaf to "wake it up" before real infusions, as covered in the gongfu brewing guide, is a legitimate technique for opening up leaf structure. It just isn't a reliable way to meaningfully decaffeinate the cup that follows, and treating it as one is likely to leave you with less flavor and only a modest caffeine reduction, not the "mostly decaffeinated" result the folk method implies.
How this compares to actual decaffeination
Commercial decaffeination is a different, dedicated industrial process entirely — solvent-based, carbon dioxide, or water-based methods applied at scale after the base tea is already made — and even that doesn't remove caffeine completely; it typically leaves a small residual amount behind. A home rinse, done in seconds with no specialized process, was never positioned to outperform an industrial method that itself doesn't reach zero.
Cold brew isn't automatically lower in caffeine
A common assumption is that cold brew tea, steeped for hours in cold or room-temperature water instead of minutes in hot water, must be lower in caffeine simply because it's cold. That's not a safe assumption. Cold brewing extracts more slowly at any given moment, which is true, but it typically runs for many hours rather than minutes, and that much additional time can extract a comparable or even greater total amount of caffeine than a quick hot steep, depending on the leaf-to-water ratio used. Temperature and time trade off against each other rather than temperature alone determining the outcome, and "cold" on its own says nothing reliable about the caffeine estimate without knowing how long it steeped and how much leaf went into it.
Why two boxes of "the same" tea can differ so much
It's worth returning to why the estimates in this piece are described as ballparks rather than facts, because the reasons compound rather than cancel out. Cultivar affects a plant's baseline caffeine production. Leaf position on the plant matters, since younger buds and leaves generally differ from more mature leaf picked lower down. Growing conditions, including shade, elevation, and climate, shift chemistry the same way they do for flavor compounds. Processing and cutting grade change how much surface area is available for extraction. A note on how much caffeine is "a lot"
Commonly cited general guidance suggests around 400mg of caffeine per day as a reasonable ceiling for most healthy adults, from all sources combined, not tea alone — and lower during pregnancy. Herbal tisanes: genuinely caffeine-free, with one caveat
True herbal tisanes — chamomile, peppermint, hibiscus, rooibos, and similar — come from plants other than Camellia sinensis and are naturally caffeine-free, which is why the estimate for herbal is a flat 0mg regardless of dose or steep time. The caveat worth knowing: "caffeine-free" doesn't mean "risk-free for everyone." Some herbs used in tisanes can interact with medications or aren't recommended during pregnancy, and this is genuinely outside what a brewing guide can responsibly advise on — if you're combining herbal tisanes with medication, or are pregnant, a pharmacist or doctor is the right source for guidance on a specific herb, not a tea website.
